Every morning, before the sun is up; the light sensitive Neon street lamps of Calcutta go off just when there is enough light. We call this time the Magic hour, and what better way than to see a city when it's waking up. We hop on to the first tram of the day as the city enters the enchanting Magic Hour. The trams, which used to be the king of the roads, still rule the streets during the magic hour. Meandering through the sleepy 300 year locality of Calcutta in full throttle ,the next few hours are spent visiting some local hidden spots around the oldest part of the city. Before the bustling giant city wakes up we’d have used all the iconic transport modes of Calcutta, enjoyed sights that are just ignored in plain sight, had breakfast in century old hidden spot, gossiped about Bengalis and Calcutta in general, learnt the meaning to “Adda” and a lot more about being a Bong. You’ll be welcomed into our kitchen to master the fine art of cooking, following my mom's recipes. Using only the freshest ingredients I'll show how I prepare and make our traditional food. We’ll enjoy Indian drinks, some starters and a delicious meal together whilst I give you insight into some of the oldest recipes in the world. We’ll welcome you to our home and serve you one of our traditional Indian drinks (chai, lassi, lemon soda, fresh seasonal juice, etc.). The class will begin with an introduction to the spices, herbs and ingredients that we will be using in the recipes. We’ll focus in more details on the North Indian cuisine which includes dishes like chapati, paratha (Indian breads), seasonal vegetable curries (garlic bhindi, aloo gobhi, dal, pumpkin curry, carrot curry, paneer masala, tinda curry, eggplant masala, baigan bharta, and gutaa curry). My wife Harshita and I will start with a demonstration and then you will have a chance to make round chapatis breads and a vegetable curry by yourself. We’ll also serve an Indian dessert to accompany our meal. There will be typical traditional Indian food and drinks, a good conversation and an informal and intimate atmosphere that makes feel at home surrounded by friends. We will be happy to provide gluten-free and vegan food on request. We will also provide e- recipes of all the dishes we cook together. Other things to note 1. Taste, Texture & Flavors of Old Delhi
Over 3 and a half hours, we will experience life in this very beautiful & fascinating part of the city and visit several food-joints that you won't find in typical guidebooks! We'll start with the famous sugar dripping Jalebis and an insight into how they're made. Then we'll navigate our way through the quaint narrow lanes to reach a long-forgotten 17'th century 'Haveli' (Mansion) ruined but still reminiscing the Mughal era. Now we'll enter into the most colourful & buzziest 'Bazaar' of Old Delhi to visit a 90-years-old shop dedicated exclusively to 'Khurchan' (a mouth-watering dessert prepared from fresh buffalo's milk). After a little exploration of the beautiful Bazaar, we'll taste different varieties of Parathas in the famous 'Parathe Wali Gali'. Now it's time to involve ourselves in the community kitchen of an ancient Sikh Gurudwara after which we will explore Asia's largest spice market and taste a combination of the best 'Chole Bhature' (a famous North Indian dish) and 'Lassi' (buttermilk) prepared in Old Delhi. We'll experience the tranquility offered by a quick stroll in the Fatehpuri Masjid after the craziness of Chandni Chowk and at last visit, a secret rooftop with the best panoramic views of the area & click some marvelous photos. The exquisite flavor of the food and delicate aroma of the spices will surely blow away your mind! We will Begin Our Journey From The City towards the Country border. Our First stop will be India's last village Attari and it's defunct Railway Station which once was a land port for trade between India and Pakistan. Then we will make our way to the Border where Evening retreat ceremony is performed. The ceremony will last for an hour and then we will go see nearby farmers who farm at the border between the two countries. We will share stories and anecdotes and finally head back to the city.
Fivefarms Coffee- From farm to cup
Coffee is an annual crop, and not all of it can be experienced in three hours. We'll start the tour showing you images of the complete cycle. You'll then be wearing the farmers' hat (literally) for a tour of the estate. Depending on which season you visit, you could also help with the job of the day: whether it's transplating young plants from the nursery, checking for fragrant coffee blossoms or picking ripe red berries. If lucky, you'll also sight some four-legged wild visitors. Once back from the estate, you'll get to see a complete roasting and if time permits, we'll roast two batches personalised for you that you can take home. End the tour with a traditional vegetarian lunch in our homestead with a perfect South Indian filter 'Kaapi' or a French press brewed by you ...This is as fresh as it can get! "Learn To Fish" As they say “The early bird catches the Worm”, the experience begins early in the morning in Baga. The Necessary gear will be provided depending on your prior fishing experience. As we trek towards our first fishing spot, we will brush on the safety requirements for this activity as well as you will be introduced to the equipment which will be utilized for the activity. We will fish at the spot until the fish bites decrease and once you are accustomed to the surroundings we will make our way to another hidden spot which is very scenic and breathtaking. Make sure you are ready and your lines are tight at all times, as you may have the bite of your lifetime. This Fishing Experience is going to be just the beginning to a whole new world of Angling. Kayaking in backwaters mangroves Harbour Arikamedu visit
Get onboard kayak after general instructions of Do and donts. Wear proper life jacket provided with the help of Kayak leader. Start paddling in the backwater - visit ancient port ruins site 'Arikamedu' which dates to 1500BC - 2AD, proceed paddling near the harbour port area of Pondicherry to witness docks ships and boats and fishermen in action. Further paddle through the patches of mangroves with small creeks and inlets. A kayak leader will join you for this experience. You can opt to chose join with a co paddler or go solo.
Fontainhas Heritage Walk
The walk begins Tobacco Square near the main Post Office in Panjim and then leads us into the heritage precinct of St. Thomas ward, passing the small chapel of Sao Tome. We visit the famous 31st January Street, and then move into the Fontainhas area passing by the chapel of St. Sebastian. This leads to a cluster of interesting buildings around Panjim Inn, Portuguese Foundation, and Galerie Gitanjali. We arrange an exclusive music appreciation session by a Goan musician while you get insights into Portuguese influence on Goan music. Get mesmerized by Latin and Konkani Folk music performed by the musician. We then return to the Post Office by a different route highlighting the elements and places of interest that liven up the Latin Quarters in the evenings . Our presenters will highlight all the above places with fascinating history and anecdotes that are unheard of and will share a very unique perspective of the making of Fontainhas. Other things to note: You may bring infants and toddlers based on your own judgement for this experience. Monsoon Sea-side Exploratory Trail
Our meeting point is Keri Beach - the Northernmost tip of Goa with the Arabian sea on the west and the state of Maharashtra in the north. After warm welcome followed by a briefing of your day with us, we will head out on an exploration of the vast Paliyem Platue at a leisurely pace or one that suites your fitness level. You will experience various geographical features, starting with a short walk on the beach , trudge a thick forested slope , wander a laterite platue with a lot of vegetation and little streams during the monsoons, water break and pictures at a cliff face and then we will follow a forest stream which flows into a fresh water pond on the beach, there are several rock pools inviting us to cool off before we walk across the beach (Kollum Beach ) and then onto a hill trail with the splendid Arabian sea for company and mesmerizing vistas on the way , finally we will arrive at Keri Beach.

The Portuguese colonial rule lasted 451 years in Goa. When they finally left in 1961, they left behind their deep rooted culture, language, values and unique architecture predominantly seen in Indo Portuguese houses & chapels. Our heritage home Casa Oliveira Fernandes is also featured in the renowned book "Houses of Goa". We will begin the tour at a meeting point and then proceed to the private chapel belonging to the Oliveira Fernandes family dedicated to Our Lady of Piety. Here we will explore the history and unique artifacts of religious significance within the chapel. We will then proceed to the house. Casa Oliveira Fernandes is a 200 year old Indo Portuguese home which is inhabited by the 7th generation of the Oliveira Fernandes family. . As we start I would suggest you pay close attention to the myriad of rare artefacts around you. Each one of them has a story to tell as they have usually travelled a long journey from across the world through the ancient trade routes. This unique experience is sure to help create a wonderful memory of your visit to Goa as you will get a peek into the mystique of Indo Portuguese homes and the secrets they hold within them. A MUST - Meet Jaipur with Pink City Tour
We will give you a nice introduction of by taking on a walk in the hustling bustling the Pink City. You will enjoy walking through BAPU BAZAAR, famous for its colourful textiles, food shops etc. You will walk past by ancient temples, beautiful ancient buildings, gates, allow lanes, hidden old shops, food street and then stop at the famous palace of winds (Hawa Mahal) for photography then continue to visit the famous blue gate (Ganesh pol) and one of the oldest temple in Jaipur. Please have a look below itinerary: Starts at Sarogi Mansion Visit Bapu Bazaar for colourful (sarees and other tetiles) Fresh vegetable & fruit market walk past street food shops visit Johari Bazaar for bangles, silver and fashion jewellery Hawa Mahal (Palace of Winds) walk past Ancient Temple Tripolia Gate (Yellow gate) We will finish this experience at one of the oldest food shop after trying the delicious jalebi and its masala chai.
