Japanese Knife Experience - Knowledge & Sharpening
I explain about our Japanese knives. You will have hands-on experience of cutting and sharpening activities. Lecture 1 hour, Hands-on 1 hour, total about 2 hours. Maximum group size is 2. I can customize the contents requested by attendances.

You can see 50 different knives and 20 sharpening stones here.
We keep our traditional artisan style. Our works are far from modern high-tech things. It's not fancy but practical and contains rich cultural history.
I don't use any machines. All works are done by our hands, stones and water. You can do it same in your home later.
All tools for sharpening are prepared.
I prepare tomatoes, carrots, meat for cutting test.
You can bring your knives for sharpening and food for test cutting, if you want.
I show my sharpening process and let you do.
In the lesson, we use 3 stones for 1 knife sharpening. You see and do full process of Japanese knife sharpening.
After sharpening, you can cut food for testing.
I am happy to talk about history, culture and crafts business too.

- Multiple coffee drinks and the stories behind them, includes history, (a few) hands-on making, tasting and comparison between traditional style vs. modern style.
- Tips and recipes for brewing / adjusting these yummies for your own taste.
- Informative but concise, all about Vietnamese coffee, no commercial or specialty biased view.
- I don't do classes or teaching stuff, but you'll understand how brewing methods / instruments bring out each style's characteristic scientifically; not just people do this and get that.
- You will see how coffee reflects and develops together with Vietnamese culture / Vietnamese characteristics.
- I expect as many questions as possible because I myself learned so much from these questions too, both coffee-related or not.
- All in all, a complete image of "what, why and how" of the coffees that Vietnamese drink.

Hop on a motorbike—like the locals—for a deep dive into Saigon’s culture. Following me, you’ll see how the city changes across its districts, from the well-to-do Districts 1, and 3 to the downtown vibes of District 10 from flower markets and small alleyways to China Town, the famous city post office, and more. You’ll even stop for coffee, peeking in the secret weapons cellar used during the Vietnam War.
1. I will take you to some main unique sites in the heart of the city such as Notre Dame Cathedral, Central Post Office, and Independent Palace. Learning the history of these colonial buildings under name of Saigon was the capital of the French colony.
2. Discover some historical points that are a bit off the beaten path in District 3. We visit a Memorial Monument Thich Quang Duc, historical buildings, and see a secret underground WEAPONS CELLAR of the VC army. In this weapon house, you will try a cup of Coffee.
3. Continuing to explore the local district 10 which is famous for the most significant wholesale flower market and an outdoor street food market. It is time for filling up your stomach with delicacy food and local drinks

Saigon’s current incarnation as a hive of trade and cultural mixture is nothing new: this photographic wander through the city’s historic Chinatown reveals Buddhist pagodas, former French school and street markets selling everything you can imagine. **Pick up at your hotel and drive to Cu Chi (60km – 1,5 hours). Upon arrival, watch a documentary film about the Vietnam War.
**Discover special constructed living areas with kitchens, bedrooms, storage, weapons factories, field hospitals, and command centers helping whoever lives inside Cu Chi tunnels meet their basic needs.
**Discover many hidden left behind trap doors and dangerous traps within the maze-like tunnels and learn more about the handmade weapon and traps used during the Vietnam War. Seeing huge bomb craters and the mere 10–13 feet thick level of upper soil can support the bearing weight of a 55-ton tank and the explosive damage of bombs left from the war.
**Break at the shooting range to shoot some real guns with Ak47, M16, M30, and M60 (shooting fee is paid separately).
**Highlight of the trip is to crawl and experience the underground town of Cu Chi Tunnels. This is the best part of the trip when you actually crawl into it to feel what it was like in the war. Guests who have claustrophobia be not afraid of crawling inside, you still can see it from above the ground.
**Taste the pandan tea and tapioca (guerilla’s war food) before heading back to Saigon. The trip ends around 2:00 PM for the morning trip and 7:00 PM for the afternoon trip.

Details activities:
07:00 -07:15 AM: Pick up at your hotel or at our meeting point. We will share our meeting point one day.
Transfer to Mekong Delta around 02 hours.
Stopping Midway for restroom/enjoying local Mekong coffee.
09:30: Arrival at our Bike Store, then pick up bikes and enjoy cycling along with villages, and the Mekong river to experience the real daily life of the locals.
Visiting one of the local markets and tasted some local fruits there.
Enjoy lunch at a super local restaurant with Mekong noodle soup or similar depending on our schedule.
We can arrange vegetarian food too.
Keep riding to a boat station and enjoy a boat trip on the Mekong River. We will visit the Floating market ( its now looks like a Floating village) These activities can be converted into morning time depending on high or low tide.
Enjoy kayaking through the island to experience Mekong river life.
Back to our bike store and transfer back to HCM city.
Drop off at your hotel at around 17:30.

Explore Mekong Delta ‘My Tho’ One Day Boat Tour

7:00 - 7:30 am | Get picked up at your city center's accommodation to Mekong Delta, My Tho, Tien Giang Province.
9:30 | Drive past the freeway surrounding the rice paddy fields, where you can see and understand the rice culture of the Mekong Delta. You are visiting Vinh Trang Pagoda, the mix art of Roman – Cambodian – Vietnamese architecture.
10:00 | Get on the boat to visit the local life on Unicorn Island and understand the local work of growing fruit and having bees at home. Surely you will enjoy the cup of the local honeybee.
-Walk continuously in the village to the fruit orchard. Have a taste of the seasonal tropical fruit and enjoy the traditional Southern Vietnamese music performance (Đờn ca tài tử).
11:00 | Highlight of the trip is a relaxing, peaceful calm rowing boat on the small canal of water coconut. Take another boat trip to the other side of the island to experience the floating fishing farm.
12:00 pm | Head to Ben Tre, the kingdom of coconut, to understand the local work of making coconut candy. Take one more boat trip or tuk-tuk to the local home for lunch. After lunch, riding a bicycle around the village or taking a nap on the hammock is optional.
2:00 | Get on the boat again to the boat station and head back to Saigon around 5:00 PM.

*My driver and I will pick you up from your Airbnb/Hotel in District 1 & 4 to go to Ben Tre City. On the way, you will have a chance to see the beautiful Rice Paddy Fields along the freeway. Have a break on the way for coffee, and breakfast.
*We will later take the boat ride to see the local culture and to understand how they live their life with the river by visiting the coconut processing village. Getting knowledge on how the coconut is separated from the husk, prize out to peel out by hand in a local factory. You will be amazed by the shapes of traditional work.
*Taking the boat to another side of the river to see the fruit orchard to taste some delicious tropical fruit of southern Vietnam and enjoy the coconut candy with the process.

From Canals to Tunnels in Cu Chi
My hometown is very close to Cu Chi Tunnels where I will guide you to the historic area and explore the daily life in the nearby village by bicycle. You will discover how people do farming on the "death land" after the war and how to make the spring rolls from rice paper. One of my sisters makes the rice paper by hand at home then you will have a chance to see how the rice paper made from rice powder traditionally. Be prepared to be brave and sweat in the tunnels and be joyful in the garden and the kitchen as you will prepare your lunch in the style of local people.
